Our main line of beef is high-level, choice-grade meat. Choice products are tested for marbling and density, ensuring that you receive the best quality product.

  1. NY Strip Sirloin: approx. 1in. thick

  2. Boneless Ribeye: approx. 1in. thick

  3. Cowboys (Bone-in Ribeye): top choice or higher, aged 21-24 days in cold storage

  4. Porterhouse: over 1 1/2in. thick

  5. T-Bone: top choice or higher, aged 21-24 days in cold storage

  6. Bourbon Sirloin Coulotte: the most tender steak tip cut

  7. Steak Teriyaki (Sirloin) Black Dragon

  8. Grass-fed NY Strip: 100% grass-fed from Maine's family farmers

  9. Grass-fed Sirloin Patties: 100% grass-fed from Maine's family farmers

  10. Grass-fed Bacon Patties: 100% grass-fed from Maine's family farmers (with bacon ground into the patty)

  11. Wagyu NY Strip: extra thick, extra rich marbling

  12. Wagyu Patties: fresh out of the grinder (very delicate)

  13. Prime Rib Roast: Special Order Only, allow for longer lead time

  14. Veal Cutlets (Hand-sliced): 100% milk-fed, top round, & pre-pounded

  15. Veal Chops, Rib Chops, or Porterhouse Loin Chops: market price, averaging under $20 per lb.
